Arguably, the most important reason you need Bee Balm is if you want to craft the Mutation Spray Pollinated gear. When used, this applies the Pollinated Mutation to crops. For this, you need the following materials:

However, you can also have Bee Balm simply to grow in your garden! This crop is multi-harvest, so it will keep producing even when you first collect. It tends to sell for around 16,000 Sheckles at a minimum, making it a good crop to sell for a nice profit.
